Evolving his culinary career with Concentrics Restaurants, Oltarsh is currently Executive Chef at ONE. midtown kitchen and oversees overall kitchen operations for Concentrics Restaurants. He is known for constantly reinventing the definition of what a classic dish should taste like – simplifying and using bold flavors and seasonings – with the effect of creating dishes that are both comforting and creative.
